I've perfected the ultimate creaminess in risotto recipes. 1/2 cup milk. 1/2 cup cream of chicken, 2 cups water, and 2 tbsp olive oil for every cup of dry Arborio rice. The key is to stir every 5 minutes and add the liquids gradually. Takes some time, but definitely worth the effort.

ReplyDeleteyou can substitute cream of brocolli or mushroom or just vegetable stock and it will be just as tasty!
